What the cooking runs on

Deep fryers, open flame, wood, cold prep. The fire rate starts here, and so does the list of insurers that want the file.

The hood records

When the hood system was last professionally cleaned. Insurers ask for the records, because a cleaned hood keeps a kitchen fire from becoming a building fire.

The liquor line

Whether you serve, and what share of sales the bar carries. Liquor liability is its own cover, priced on how central the alcohol is.

The lease clause

Most leases name an insurance amount you must carry. The file says what the lease demands, so the policy matches it exactly.
